Ordering beef in bulk can be an arduous process for someone who has never done it before. There is a whole new "language" to learn when talking beef.
Hanging weight V.S. cut weight:
Hanging weight is the weight of the animal after the hide and innards have been removed. Many times this term is confusing for first- timers because that is not the ending weight. Frequently producers will list their price at $xxx/lb. hanging weight. (usually a low number).
For example: $4.00/lb hanging weight; the beef is weighing in at 800lbs= $3200.00
It should be reinforced that approximately 40% of the weight is waste (bone, fat, sinew, etc.)
Cut weight is the weight of the actual amount of cut and wrapped beef you are purchasing. Usually the price is higher which can be off putting to some. We have found that it is the simplest way to price our beef, so this is what we do. You are getting xx number of lbs. of wrapped meat packages and you are paying $x for that weight per lb. Either way of beef pricing is wrong, some just prefer one way to the other.
How do I fill out the Cut Sheet?
On all of our 1/8th or 1/4th of a beef packages you will get our Standard Cut. Which means your steaks will be 1.25" thick, your roasts will be 2-4lbs, the burger will be 85/15% blend (85% meat 15% fat), and you will receive a mix of steaks, roasts, korean style ribs, stew meat, cube steak and hamburger.
If you choose to go BIG and order a 1/2 or a Whole Beef you will be able to do a Custom Cut sheet. Which we can help you with if you are unsure. The sheet will ask things like steak thickness, roast size, burger blend ( the higher the percentage of meat the more lean it will be), certain cuts come from the same area of the beef just cut in a different way we can help you individually with those choices. We include the cutting in our price, however, if you want specialty butcher items such as; smoked meat, sausage, bologna, pre-made patties, etc. that will be added on as an additional cost. How much freezer space will I need?
1/8th of a Beef:
Good for 1-2 adult households or small families.
Will take up most of a standard size refrigerator/freezer ( where the freezer is on top) or up to half of a small chest freezer.
1/4th of a Beef:
This is made for 2-3 adults with 1 or 2 kids. (4-5 people)
Will take up 1/2 (or slightly over) of a small chest freezer or slightly less than 1/2 of an upright freezer.
Most families who decide to go this route use a chest freezer to save space for other delicious foods.
1/2 of a Beef:
Half-a-beef is great for Mid sized-Larger families with a couple growing kiddos.
This will take up most of a LARGE chest freezer or about 1/2 of a large upright freezer.
The Whole Dang Thing!
Clearly this size is for a large family or a family with a few starving teenage boys who are working hard and need big meals!
This will take up all of a LARGE upright freezer and probably 1/2 of a smaller
chest freezer, of course depending on the size of your animal.
We do try very hard to keep our animals a consistent size when we send them into the butcher, but if you are wanting a whole beef and wish for a slightly smaller animal we can try to get you one of the smaller dudes.
On our whole beef purchases we require that you pick up your beef at the ranch or from the butcher shop. We are not yet set up to affordably ship a whole beef to your door at this time. If you are unconcerned with the cost of shipping and know that it may be more than you paid for the whole beef, then by all means we will be happy to ship it to you ( but this is not the norm, and you must request it via email)
